Liquor - Spirit

A prestigious Italian spirit made from the grape pomace of the famous Valpolicella wine, Amarone. It has an intense aroma and a fruity flavor that reflects the original grapes.

The grape blend includes 50% Corvina, 20% Corvinone, 20% Rondinella, and 10% Molinara, Oseleta, and Turchetta. These grapes come from the hills of San Pietro in Cariano, 300 meters above sea level, with volcanic and calcareous-gravelly soils. The grapes are hand-harvested in mid-September, and the pomace undergoes a natural four-month withering process. It's then carefully distilled using steam at low pressure and aged in oak barrels, giving it a golden color and a concentrated aroma of dried fruits. With 42% alcohol content, it's a versatile spirit to enjoy pure or chilled after a meal, capturing the essence of Amarone in a remarkable distillate.

Production Technique

The grapes are hand-harvested in mid-September and then left to naturally wither for about four months in a controlled environment where temperature, humidity, and grape weight are carefully monitored. The grape pomace, fermented and selected, is taken to the distillery while still soaked in juice and immediately processed. This results in a full-bodied and aromatic grappa with a higher alcohol content, ideal for aging in oak barrels. The distillation process occurs in February using a discontinuous steam distillation system at low pressure. After distillation, the grappa is aged in oak barrels to enhance its flavor.
