Sommelier Wine

This wine is crafted from Sangiovese grapes sourced from vineyards directly managed by the estate. These vines are impressively aged at 42 years and are situated at an elevation of 400 meters above sea level, with a northeast exposure. The soil in these vineyards consists of a blend of clay, limestone, and sand. The grapes used for this wine come from the finest quality of these 42-year-old vines, planted at a vine density of 4000/4500 plants per hectare. The harvest for this vintage took place on September 30, 2016.

Production Technique

This wine involves meticulous manual techniques. The grapes are hand-picked and gently destemmed, with careful berry selection by hand. The fermentation process lasts for 10 days, followed by an additional 26 days of maceration, resulting in a total of 36 days of traditional fermentation without yeast activation at a controlled temperature of 30°C. Afterward, malolactic fermentation occurs in steel tanks in January. The wine is then transferred to French oak barrels for a lengthy aging period of 48 months. It was bottled on April 11, 2021, producing a limited quantity of 1549 bottles in the standard 0.75-liter size, 22 bottles in 1.5-liter magnums, and 10 bottles in 3-liter size. The wine boasts an actual alcoholic strength of 14.65% Vol, a dry extract of 34 g/l, and a total acidity of 6.6 g/l, expressed as tartaric acid.

Wine description
Color: intense ruby red color tending to garnet with violet very dark.
Bouquet: complex and intense with notes of mature plum, cherry, and dark purple fruits. Balanced hints of spice, black pepper, vanilla, cinnamon, chocolate, and sweet tobacco.
Taste: soft, velvety tannins; flavors mirror the aroma, and the balance and persistence are impressive.
