Sommelier Wine

Crafted as a tribute to Armando Parusso, the visionary founder of our esteemed winery, this Barolo is meticulously assembled from the finest Nebbiolo grapes sourced from the renowned Mariondino, Mosconi, and Bussia CRUs. The grapes are harvested entirely by hand, ensuring the preservation of their quality and integrity. They are delicately gathered in small perforated baskets, preserving their freshness and preventing premature fermentation.

Production Technique
Following gentle pressing, the grapes undergo an extended maceration period. The alcoholic fermentation is spontaneous, driven by indigenous yeasts, and without the addition of sulphites. Meticulous control over maceration times and temperatures ensures the preservation of the grapes' intrinsic qualities. The wine matures gracefully in small barrels for a minimum of 18 months, allowing it to develop complexity while in contact with its indigenous yeasts. Subsequently, it undergoes refinement in bottles at a controlled temperature of 15°C, further enhancing its character and elegance.
