Crafted from the noble Sangiovese grapes, this wine is a testament to meticulous vineyard management. The vineyards, nestled at an altitude of 400 meters above sea level and bathed in the gentle Northeastern sun, nurture vines aged between 17 and 20 years. The soil, a harmonious blend of clay, limestone, and sand, imparts a unique terroir. These carefully tended vineyards yield the finest grapes, with a planting density of 4500 plants per hectare.

The culmination of this artisanal care was the harvest on October 4, 2019, capturing the essence of a remarkable vintage.

Production Technique

This wine is crafted with precision and care, beginning with a hand-picked selection of grapes that undergo a meticulous sorting process. The fermentation process is carried out in stainless steel tanks for 21 days, with no pumping but instead gentle mixing (follature) performed five times a day. The fermentation begins with criomaceration at 4°C, followed by traditional fermentation at a controlled temperature of 30°C. Aging and Bottling: In January, the wine is transferred to oak barrels from Slavonia, where it matures for 12 months, imparting complexity and character. The malolactic fermentation takes place in oak in August 2020, enhancing the wine's flavor profile. Finally, the wine is bottled on 12/04/2021, resulting in 8500 bottles of 0.75L. This meticulous winemaking process ensures a wine of exceptional quality and depth.

Wine description
Color: intense ruby red color with slight ruby.
Bouquet: intense and complex with hints of plum, cherry and berries ripen very intense, balanced hints of spice, black pepper and vanilla, a little hint of chocolate and coffee.
Taste: tannic, velvety and slightly astringent, the flavors in the mouth reflect the nose.

A very versatile wine is a classic pairing with pasta and / or white meat, but does not mind the pairing with pork or veal cooked in a simple way or with fresh or slightly aged.
